  • 10 small flour or corn tortillas

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • 1 tsp taco seasoning (optional for extra flavor)
  • ½ cup sour cream (for topping)
  • ½ cup chopped fresh cilantro (for garnish)
  • ½ cup diced tomatoes (for garnish)
  • ¼ cup sliced black olives (optional)

Instructions

  • Preheat Oven: Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • Prepare Base Layer: Spread a thin layer of enchilada sauce on the bottom of the dish.
  • Assemble Layers: Place 2-3 tortillas to cover the base, followed by a layer of refried beans, black beans, pre-cooked ground beef, salsa, shredded cheese, and a sprinkle of taco seasoning.
  • Repeat Layers: Continue layering tortillas, beef, beans, salsa, and cheese until all ingredients are used, finishing with cheese on top.
