- 1 lb pre-cooked seasoned ground beef (or canned taco meat)
- 10 small flour or corn tortillas
- 1 (10 oz) can enchilada sauce or taco sauce
- 1 (15 oz) can refried beans
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup salsa
- 2 cups shredded Mexican cheese blend
- 1 tsp taco seasoning (optional for extra flavor)
- ½ cup sour cream (for topping)
- ½ cup chopped fresh cilantro (for garnish)
- ½ cup diced tomatoes (for garnish)
- ¼ cup sliced black olives (optional)
Instructions
- Preheat Oven: Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Prepare Base Layer: Spread a thin layer of enchilada sauce on the bottom of the dish.
- Assemble Layers: Place 2-3 tortillas to cover the base, followed by a layer of refried beans, black beans, pre-cooked ground beef, salsa, shredded cheese, and a sprinkle of taco seasoning.
- Repeat Layers: Continue layering tortillas, beef, beans, salsa, and cheese until all ingredients are used, finishing with cheese on top.
- Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is melted and bubbly.
- Cool & Serve: Let it cool for 5 minutes, then top with sour cream, cilantro, diced tomatoes, and olives. Slice and enjoy!
Notes
- For a low-carb version, use low-carb tortillas or layer with zucchini slices.
- Swap ground beef with shredded rotisserie chicken for a different variation.
- Store leftovers in an airtight container in the fridge for up to 3 days.
